Healthy Breakfast Cookie

One of my favorite blogs to read is the Fitnessista. She has so many good tips for healthy eating and living and just seems like such a fun person. I always get excited when I see her posts pop up in my google reader. For a while, she has mentioned eating a breakfast cookie and just talked about how much she loved them, so I finally decided to try it. It is a wonderful, delicious, and healthy breakfast. The Fitnessista calls for 1/2 scoop of protein powder but I just used about a tsp. and it didn't change the texture or anything so I think you could leave this out if you so desired.

Ingredients:
1/3 cup oats
1 tbsp natural peanut butter or almond butter
1/8 cup skim milk
Optional:
1/2 scoop of protein powder (approx. 1/8 cup)

Add in options:
1 tsp. honey
cinnamon
mashed banana
chocolate chips
anything else you would like...

Directions:
Combine oats, nut butter and protein powder in a small bowl. Stir to combine and use a spoon to break up the mixture until it is of a crumbly consistency. Add milk and stir until entire mixture is moistened. Stir in the mix-ins of your choice. (I used honey, cinnamon and a few chocolate chips). Spread mixture onto an appetizer sized plate using the back of the spoon, flattening it into a round shape with equal thickness throughout. Refrigerate uncovered overnight. Next morning grab a spoon and you're ready to enjoy!

  2. You are right about Fitnessista! I had never seen her blog before, but she is in my reader now! This looks like a delicious and easy breakfast, can't wait to try it!
