I absolutely love my mother-in-law's blackberry cobbler and am so thankful she gave me the recipe last year, but I've never gotten around to making it. It's such a great throw everything in the dish kind of recipe, and can be adapted for any kind of fruit.
We had enjoyed an amazing mango cobbler at the Boma when we were at Disney, so I thought I would try and re-create that. After perusing some other mango cobbler recipes through searching the internet, I decided to stick with my mother-in-law's recipe and just add in cinnamon and vanilla to the mango. This dessert is so comforting and delicious. and is also great paired with vanilla ice cream. The mango is a great alternative to peach, especially if you are looking for something different.
