Cilantro Lime Rice


I have been wanting to make some of my old standby recipes, but wanted to mix them up with new sides. I had bookmarked this rice recipe from Gina's Weight Watcher Recipes a while back and thought it would be good to try instead of a typical mexican rice. This rice was so fresh and full of flavor. I served these with these enchilada roll-ups and I'm even making it again this week with my chicken tacos. Gina says this is a copy-cat version of the rice at Chipotle's. I've never eaten there as we don't have one around us, but next time I come across one I am definitely eating there because this rice was so awesome! It is going to be a definite staple side in our household from now on.

Chipotle Cilantro Lime Rice
Servings: 4

Ingredients:
1 cup extra long grain rice or basmati rice
1/2 lime, juice of
2 cups water
1 tsp salt
3 tbsp fresh chopped cilantro
4 tsp vegetable oil

Directions:
In a small heavy pot, add rice, water, 1 tsp oil and salt. Boil on high until most of the water evaporates. When the water just skims the top of the rice, reduce to low and cover about 15 minutes. Shut off flame and keep covered an additional 5 minute.In a medium bowl, combine chopped cilantro, lime juice, rice and remaining oil and toss until completely mixed.

  1. Yum! I love the rice at Chipotle and I make Mexican and Southwestern dishes frequently. I'm definitely trying this one!

  2. I think I heard they are putting a Chipotle in Nashivlle! You will have to make a trip up here when it opens and we can do lunch! :o)

  6. We make a similar rice, but use brown rice. It is so good! Love the cilantro and lime combo!
