I make these potatoes often. They are an easy side dish to throw together and jazz up your typical potatoes a bit. This goes great with burgers, or a fancy chicken dish...very versatile.
Parmesan Garlic Potatoes

Ingredients:
5-6 small red potatoes, diced
1/4 cup grated parmesan cheese
1 tsp. garlic powder
Cooking Spray or 1tbsp. olive oil
Directions:
Preheat oven to 400 degrees.
Place potatoes in a microwave dish and cover with water. Microwave for about five minutes.
Drain potatoes and spray with cooking spray or olive oil, stir to coat. Add in parmesan cheese and garlic powder. Stir to combine.
Spray a baking sheet with cooking spray. Evenly spread out the potatoes on the baking sheet and bake for approximately 20-25 minutes until potatoes are fork tender, turning potatoes half way through.

What a great idea to microwave them first! I avoid roasted potatoes alot of the time because they take so long to bake. Looks delicious!
