Adam & I had a breakfast meeting for the upcoming youth retreat that we are leading at the end of August. I wanted something that was delicious but healthy so I turned to Cooking Light and found these awesome Raspberry Cream Cheese Muffins. I had everything I needed except buttermilk, which I picked up at the store. These were so good! I got a ton of compliments on them. The cream cheese really adds a nice fluffiness and the slight tartness of the raspberries compliments the sweetness of the muffin so nicely.
I also have to say that I used raspberries that I grew!! I planted a raspberry bush 3 years ago. The first year I was certain that it died, but it came back last year, though didn't produce enough fruit to make anything. Well this year it produced a ton of raspberries and grew so big it was almost out of control!! I can't believe I grew these!
I pretty much followed the recipe exactly, so here is the link to the recipe on Cooking Light. I did omit the walnuts, however, because I don't like nuts in my muffins. I'm sure you could substitute the raspberries for any other type of berry as well. Hope you enjoy!

ReplyDeleteAnd congratulations on growing and using your own berries. I have raspberry bushes growing in my backyard, Unfortunately the wildlife seems to love them just as much as I do, if not more.
