This tuna salad is revolutionary. I know that may sound ridiculous, but I am totally not kidding. It is so good I keep going back to the fridge for just one more cracker with that deliciously flavorful salad on top. It changes everything I ever thought about one of my lunch favorites. I have been a long time lover of tuna salad with mayo. I honestly don't know if I can ever go back now. I just love this for it's lack of mayo and use of olive oil instead. This tuna salad is the perfect blend of flavors and the lemon gives it such a nice freshness. There is no fishyness about it at all.
This looks so gourmet you could serve it at a party as an appetizer and not have to worry about it sitting out. I served these on whole wheat crackers to make it even healthier, but they are great on saltines as well. I found this on Cate's World Kitchen. Deli Tuna Salad

Ingredients:
2 6-oz cans solid white albacore in water, drained
1 tbsp chopped capers
1/4 red onion, finely diced
1 rib celery, finely diced
juice of 1/2 lemon
3 tbsp olive oil
salt
freshly ground black pepper
Directions:
Combine all ingredients, adding salt and pepper to taste.
Serve on crackers, in lettuce cups, or on sandwiches.
