I spotted this recipe at For the Love of Cooking a while back and thought it sounded like a great weeknight meal. I've had this on my menu for the past two weeks and haven't gotten around to making it until now (I even let one package of mushrooms go bad-yikes!) So this week I was determined to make it and not let my second pacakge of mushrooms expire. This was so hearty and comforting but without all the heaviness you get from a cream sauce. I definitely reccommend trying this one out.
Oh, another note...Adam decided that orzo didn't sound good to him so he made his own linguine noodles and enjoyed it thoroughly, so you could definitely switch up the pastas on this one. He did get a few orzo bites because I was following the recipe and it says to add the pasta into the chicken mixture, so I did that without thinking about his separate noodle choice. So I spooned out as much of the orzo as I could-haha! Enjoy:)
I didn't make any changes other than subbing red onion for yellow, so visit the link at the top of the post for the recipe. Her blog is amazing and almost all (if not all) her dishes are her own creations.
I adore orzo! I just added some to the veggie soup I posted on my blog. I finally found it in whole wheat!
ReplyDeleteThis looks so delicious! I love orzo and am always looking for new recipes that use it. I'm glad to know I'm not the only one that sometimes lets food spoil by accident :) You are such a sweet wife for scooping out the orzo!!!
