I have seen these floating around the blogsphere for a while. I remembered seeing them on one my favorite blogs, Delicious Melicious and thought they sounded like a great, easy weeknight meal. These were so flavorful and super easy and quick to make. I love that all of the ingredients are things that I always keep on hand, so that's another plus! These were so great! I don't have a quesadilla maker, so I used Melissa's skillet method and it worked perfectly, especially since these were just for Adam & I and I only had 2 tortillas left, so I just used one for each of us and folded it over.
Texas BBQ Chicken Quesadillas

Ingredients:
1 TBSP of extra virgin olive oil
1 small or 1/2 large vidalia onion, sliced into rings
1 TBSP honey
2 chicken breasts, diced
1/2 cup BBQ sauce
1 Cup shredded Mexican cheese
2 ten inch flour tortillas
Directions:
Heat one tablespoon of oil in a skillet over medium high heat. Add the onions and cook until they begin to caramelize. Mix in the honey and stir until it is golden brown.
Remove from skillet and set aside.
Spray the skillet with cooking spray and add the chicken. Cook through over a medium high heat. Stir in the BBQ sauce to evenly coat the chicken. Remove from skillet.
Stove-top method: (Do this after you've cooked the onions and chicken.) Spray your skillet with non-stick spray. Place tortilla in skillet and sprinkle cheese over the whole thing. Then, on just half of the tortilla, spoon the onions and chicken. Let it heat through a little until the cheese is melted and the tortilla starts to brown a bit. Then, fold it in half, let it sit for a minute and that's it. The tortilla will be crispy on the outside while the cheese is melted and gooey inside. Repeat for the next quesadilla, if desired.
This sounds delish! I am always looking for new ideas for leftover chicken and I love BBQ chicken. Can't wait to try this one!
