Baked Sweet Potato Fries


Sweet potato fries have become one of my favorite side dishes. I love, love, love them! If they are on the menu there's no way I'm ordering any other side. I thought it would be nice to replicate them at home, but bake them so they aren't as many calories. The hardest part is just cutting them up...but it's no sweat if you have a great knife. I took Annie of Annie's Eats advice and soaked them in cold water to help them crisp up & it helped a little...but if anyone has any other suggestions to help them get crispier without burning I'd love to hear them! I just checked Annie's site and realized I didn't soak mine for long enough. I made adjustments to the recipe below for her reccomended 20-30 minutes. Definitely trying that next time!


Baked Sweet Potato Fries

Ingredients:
2 medium sized sweet potatoes, peeled and cut into matchstick pieces
1/2 tsp. Kosher Salt
1/2 tsp. Fresh Ground Black Pepper
Cooking spray or 1-2 tbsp. olive oil
Honey to drizzle over top, if desired

Directions:
Preheat oven to 400 degrees.
Cut off peel of sweet potato and cut into matchstick sized pieces.
Soak sweet potato fries in a large bowl of water. Soak for approx. 20-30 minutes, then drain the water and pat dry.
Spray fries with cooking spray or drizzle with olive oil. Add salt & pepper and toss to combine until fries are nicely coated.
Spread sweet poatoes evenly on a sprayed baking sheet, and bake for approx. 35 to 40 minutes. Test for crispiness & doneness. May need to bake longer depending on the size of your fries.
Take out of oven and lightly drizzle honey over top, if desired. Serve with honey mustard or ketchup for dipping.

  1. I love sweet potato fries! Thanks for the tip about the cold water. Never new that. I like mine with a little kick so I add a little cayenne pepper. Delish!

  2. I love, love, love sweet potato fries. I usually put cinnamoney and cayenne pepper on them. I'll have to try the cold water...what a great tip!

  7. I made these a few months ago and tried soaking as well - did not get them crispy either. I think Annie suggested soaking them in water after realizing that hers weren't crispy, so I don't know that she tried it. I get emails from Cook's Illustrated and one of them claims that "Cook's Country" has a recipe that makes them crispy... they say it has something to do with microwaving on paper towels before baking to soak up the moisture. But, they were still good even if they weren't crispy! :)

  8. I looove sweet potatoes in any form, but especially in fry form! I've found that cooking them on a baking sheet lined with a rack gets them a little more crispy because the heat can circulate all around them. I also tend to cook them at a higher temp (425-450!) :-)
