It's Tuesday night and those "late night munch-ies" strike. I've got a hankering for s'mores, but there's no campfire in sight. What's a girl to do?? There's no time to make these delectable s'mores cookies, brownies, or bars, because it's almost bedtime. Here's the solution, make your own s'mores any night of the week in just minutes! All you need is a microwave, or you could do it with a mini kitchen torch if you happen to have one of those. Here's the step by step how-to guide to satisfy that craving.
First I take a graham cracker and break it in half. Smear it with a thin layer of natural peanut butter on one side of both pieces.
Then on the bottom piece, add your chocolate of choice. I tend to roll with a combination of semi-sweet chocolate chips & white chocolate chips. I then place that bottom piece on a microwavable plate and microwave for 5-7 seconds until soft.
Next, place a marshmallow on top of that piece and microwave for 10 seconds. The marshmallow should expand a good bit. Immediately remove from microwave and place other graham cracker piece on top, pb side down.

Weeknight S'mores:
Ingredients:

handful of chocolate chips or 1 small piece of a chocolate bar
marshmallow
