This is another restaurant inspired dish. I love the orchard harvest salad at Panera and it is so easy to make at home! I made an apple cider vinaigrette to go with it and it was a nice compliment to the pears & blue cheese. This is an easy salad to throw together at the last minute and your friends will think you are so fancy! This would be great for a dinner party too! The dressing recipe below is for two to three people, so feel free to double it as needed. I used dried cranberries but feel free to just use your favorite dried fruit.
Orchard Harvest Salad with Apple Cider Vinaigrette

Ingredients:
For Salad:
Lettuce of your choice ( I used the butter lettuce mix)
Blue Cheese
Pecans
Dried Cranberries
1-2 Pears, diced
For Vinaigrette:
1/4 cup Apple Cider Vinegar
1/4 cup Honey
1/4 tsp. salt
1/8 tsp. fresh ground black pepper
1/4 cup Olive Oil
1/4 cup Honey

Directions:
For Vinaigrette:
In a small bowl whisk together apple cider vinegar, honey, salt & pepper until combined. Continue whisking and slowly pour in olive oil. Whisk thoroughly, cover and refrigerate until ready to use.

To assemble salad:
Place lettuce in two separate bowls. Top with pear, a sprinkling of blue cheese, dried cranberries, and pecans. Drizzle with dressing & enjoy!
