100 Calorie Pack Cookies


I love to have dessert each night after dinner. I always just need a little something sweet. I try to have something that's not super bad for you, (like Skinny Cow ice cream sandwiches-LOVE!- or a weeknight s'mores). I've bought 100 calorie packs in the past, but let's be honest some of them can taste a little bit on the cardboard side. When I saw these, I was so excited because not only was it a 100 calories per serving, but they are homemade & I would know exactly what went in them with no preservatives or weird chemicals. These bad boys taste great, but I would portion them out because you could easily pop about 10 of these in your mouth without knowing! Also beware the dough...I did some sampling on that as well!:) Great little after dinner treat without all the guilt!


100 Calorie Pack Cookies

Makes approximately 11 packs of 4 cookies each (44 cookies)

Ingredients:
2 Tbsp butter, softened
2 tsp canola oil
1/2 cup packed brown sugar
1 tsp vanilla extract
1/8 tsp table salt
1 large egg white
3/4 cup all-purpose flour
1/4 tsp baking soda
1/3 cup mini chocolate chips

Directions:
Preheat oven to 375 degrees. Cover baking sheet with parchment paper, set aside. In the bowl of a stand mixer, cream together butter, oil & brown sugar. Add in vanilla, egg white & salt. Mix until combined.

In a small bowl, whisk together flour & baking soda. With mixer on low, slowly add flour mixture to butter mixture a little at a time. Remove bowl from mixer & stir in chocolate chips.

Drop dough by rounded 1/2 teaspoons on prepared baking sheet, about 1 inch apart. Bake cookies until edges are lightly golden about 5-7 minutes. Place cookies on cooling rack to cool completely. Store in airtight container. Alternatively, you can place the cookies in the freezer in 4 cookie packs and pull them out as needed, allowing them to come to room temperature.

One serving is 4 cookies, which equals approximately 100 calories.

    I'm not crazy about the store bought 100 cal cookies either. I always just think I may as well have one of the full fat ones-at least they taste good.
    I'll have to give these ones a try.

  5. Just made these tonight and they're yummy! I used a teaspoon to scoop them to save time, and just ate two to have 100 calories. Yum! Oh, and I put a few flakes of sea salt on each one because I love that salty/sweet contrast!
