As some of you know, I am a HUGE NFL fan. I love the Titans all the way, but there are several other teams I follow as well because of a certain player or coach that I respect. Sadly, none of those teams made it to the Big Dance. However, I still love NFL football, so it was only natural that we host a Super Bowl party. We had such a great time and our friends brought some wonderful food. I made this hot bacon & swiss dip that I had tasted at Adam's company Christmas party. I immediately asked him to get the recipe for me. This is so addictively delicious! I love it with tortilla chips, but it's great on crackers too. Make this and you won't be sorry! Well, your waistline might be because it's hard to stay out of! I did lighten it up a little, but I consumed quite a lot of it!:) I also included some tips below to make this ahead of time so it's not so hectic just before guests arrive.
Hot Bacon Swiss Dip

Ingredients:
8 oz. 1/3 less fat cream cheese, softened
1/2 cup light mayo
1 c swiss cheese (Can sub shredded parmesean cheese)
1/4 c finely chopped onion
1/2 cup ritz crackers, crushed (I used wheat ritz)
1 pkg. real bacon bits or 8 slices bacon, crumbled
Directions:
Preheat oven to 350 degrees. Spray a shallow baking dish with cooking spray, set aside.
In a medium sized bowl, combine mayo, cheese, onion & cream cheese. Stir to combine.
Spread cream cheese mixture into the prepared baking dish. Top cream cheese mixture with crackers and then top with bacon, distributing evenly.
Bake 10-12 min, until cheese is melted and bubbly.
*To Make Ahead: Prepare the cream cheese mixture and spread it into the dish and refrigerate. Take it out of the refrigerator about 10-15 minutes prior to baking and add the crackers & bacon at this time. Bake as listed above.
Also, after baking you can keep it warm in a 225 degree oven until ready to serve.
Cheese and bacon? SOLD!!!!! Looks so good!!!
