Baked Zucchini Fries


I've been wanting to make these for quite some time. I had fried zucchini strips a couple of years ago at Giordano's pizza and was delighted to find this recipe since it was baked and healthier than the fried version. I actually served this as an appetizer before our pizza and dipped them in pizza sauce. These were so tasty and addictive we almost filled up and had to stop ourselves so we had room for the pizza! This would make a great addition or appetizer for any Italian meal!

Baked Zucchini Fries

Ingredients:
3 medium or 2 large zucchini
2 large egg whites, beaten
1/2 cup panko bread crumbs
2 tbsp. grated Parmesan cheese
1/4 tsp dried Italian seasoning
Pinch of dried oregano
1/4 tsp garlic powder
Pinch kosher salt
Pinch freshly ground black pepper

Directions:
Preheat oven to 425 degrees. Prep baking sheet by spraying with cooking spray and set aside.

Take zucchini and cut each in half horizontally, then vertically and cut into skinny sticks.

In a small bowl, add egg whites and beat until frothy.

In a medium sized shallow bowl add panko, Italian seasoning, oregano, garlic powder, salt, pepper & parmesan cheese. Stir to combine.

Take each zucchini stick and coat in the egg whites, then dip in the breadcrumb mixture, making sure to evenly coat each side of the stick. Place zucchini sticks on baking sheet.

Bake for approximately 20 minutes, turning zucchini half way through baking. Bake until lightly golden brown. Serve warm with your favorite
pizza sauce.

  1. I just made a batch of zucchini fries the other day too using some lemon pepper breadcrumbs I had. They were awesome and now I'm really wanting to try them with panko.
