Party Pimento Cheese


My mom has been making this recipe for several years now. I have to confess that I really hate pimento cheese. Really hate it. I wouldn't try her recipe for a long long time. This fall, I finally decided to try some, and it was wonderful! It wasn't all watery and gloppy like so many pimento cheeses that I've tried in the past. This was so great and I found myself craving it from time to time. So this holiday season, I got her to show me how to make it and I made it for our Christmas Caroling party. The entire bowl was gone very quickly. We served it with crackers and also on sandwiches. I urge you to try this, even if you are a pimento cheese skeptic.


This also uses a specific ingredient that makes the dish. I don't normally like to specify brands or anything but in this case I definitely reccommend going with it. It's velveeta shreds. It may be a tad hard to find, but I found it at wal-mart. If for some reason you can't find it, I suggest maybe getting a block cheddar cheese and shredding it in really thick shreds.

Party Pimento Cheese

Ingredients:
1 bag (1 3/4 cup) shredded sharp cheddar (2 % if desired)
1 bag (2 cups) velveeta shreds
4 oz. diced pimentos (don't drain)
3/4 cup mayonnaise

Directions:
In a medium bowl combine all ingredients and stir until combine. Refrigerate at least 10 minutes prior to serving. Store in an air tight container in the refrigerator.

  1. I love pimento cheese and I have even a larger love for parties, so this sounds like a winner! I've never tried the velvetta in the bag. We are having a NYE dinner party and this just got put on the menu. I think I might add a little jalapeno in mine to spice things up. Thanks so much for sharing.

  2. I make a similar pimento cheese but it only has cheddar, no Velveeta, and I add green onion and celery. Jalapeno sounds like a good addition too, Misty.

  4. It looks wonderful! I always leered at pimento cheese as a kid...never would even try it. Now I'm wishing I had some :)
