I have been searching for a good tilapia recipe and saw this on Delicious Meliscious. It definitely fit the bill. This recipe is super healthy and easy for a great weeknight meal. I paired it with the butternut squash risotto that I posted last week. The original recipe called for spinach, but I left that out. I also added a squeeze of lemon over top of the fish right before serving that added a nice punch of flavor.
Directions: Preheat broiler to high. Coat a small pan with olive oil cooking spray; place tilapia on prepared pan. Spray tilapia with cooking spray.
Parmesan Tilapia

Ingredients:
1 lb. fresh Tilapia
3 teaspoons grated Parmesan cheese
3 teaspoons bread crumbs
Salt and pepper to taste
Directions: Preheat broiler to high. Coat a small pan with olive oil cooking spray; place tilapia on prepared pan. Spray tilapia with cooking spray.
In a cup, combine Parmesan cheese, bread crumbs and salt and pepper; spoon over tilapia. Coat fish again with cooking spray and broil until top looks golden, about 6 minutes.
Mmm I LOVE parmesan and tilapia together! And this sounds a lot healthier than my recipe which calls for butter and mayo!
