Parmesan Tilapia

I have been searching for a good tilapia recipe and saw this on Delicious Meliscious. It definitely fit the bill. This recipe is super healthy and easy for a great weeknight meal. I paired it with the butternut squash risotto that I posted last week. The original recipe called for spinach, but I left that out. I also added a squeeze of lemon over top of the fish right before serving that added a nice punch of flavor.

Ingredients:
1 lb. fresh Tilapia
3 teaspoons grated Parmesan cheese
3 teaspoons bread crumbs
Salt and pepper to taste

Directions: Preheat broiler to high. Coat a small pan with olive oil cooking spray; place tilapia on prepared pan. Spray tilapia with cooking spray.
In a cup, combine Parmesan cheese, bread crumbs and salt and pepper; spoon over tilapia. Coat fish again with cooking spray and broil until top looks golden, about 6 minutes.

  1. Mmm I LOVE parmesan and tilapia together! And this sounds a lot healthier than my recipe which calls for butter and mayo!

  6. Ben's review to me (without knowing I am posting it) , "That fish was so freakin' good! It's like it had just enough taste to it without overpowering the fish. It's also one of the fastest meals we have made."

I am not sure how many men post to this blog, but there is a candid response from one. ha
