Breakfast Pizza



I originally saw an idea for a scrambled egg pizza on Culinary in the Desert. I saved the recipe but never got around to making it. Then last week, while my family was at Disney World, we ate at Chef Mickey's (which is amazingly good and so fun) and they had breakfast pizza. It was so unique and so delicious that I went back for a second piece. My mom saw the chef and asked him what was in it, and he obliged. So, I decided to try and recreate it this week to keep our vacation going. I did this in a kind of semi-homemade way to save time and use up some things I had(I used a refrigerated dough and jarred real bacon crumbles), but you could certainly go the all scratch route. This may sound like a weird combination of flavors, but trust me it is really delicious. Adam gave it two thumbs way up and we will definitely be making this again for a quick and easy, delicious weeknight meal.


Breakfast Pizza
Adapted from Chef Mickey's at Disney World & Culinary in the Desert

Ingredients:
Your favorite pizza crust
1/4-1/2 cup part skim ricotta cheese (enough to spread a thin layer over the crust)
6 eggs
1/4 cup milk
salt & pepper to taste
1/4-1/2 cup shredded 2 % monterrey jack cheese (add more, if desired)
1/8 -1/4 cup bacon crumbles

Directions:
Spray a large skillet with cooking spray. In a small bowl, add eggs, milk, salt & pepper to taste. Whisk together to break up eggs. Pour egg mixture in skillet and scramble eggs. Once scrambled, allow to cool about 5 minutes.

Preheat oven to 425 degrees.
Spray a round baking sheet with cooking spray and spread your pizza dough out into a circle about 12 inches or so. Spray dough with cooking spray (preferably olive oil spray) and spread a thin layer of ricotta, leaving about an inch of dough on the outer edge.
Top with scrambled eggs, bacon crumbles, & shredded cheese.
Bake for approximately 13 minutes, or until crust is golden brown.

  2. My husband would love this. Weirdly enough, he asks for Breakfast Pizza all the time. I've never made it. Maybe I'll surprise him with this!

  3. Oh I LOVE breakfast pizza! Which is weird because I normally hate breakfast foods. But either way I've never made it myself...I'll definitely have to surprise my husband and make this for him soon!
