Chicken Enchilada Roll-ups


We had a dinner meeting at our house on Friday night to prepare for a youth retreat we are leading in August, and I decided it would be fun to have a Mexican Fiesta theme to the dinner. So everyone brought some sort of mexican dish. I had seen these roll-ups on Delicious Meliscious and Cook Like a Champion and knew they would be a great addition to the party. Little did I know they would be such a huge hit! These went like hotcakes! They were so fresh and full of flavor and the perfect bite. This is my new go-to appetizer! They were super easy to make and everyone was asking how to make them. Definitely give these a try for your next gathering.


Chicken Enchilada Roll-Ups

Ingredients:
2 8-oz. packages cream cheese, softened
1 1/3 cup shredded Mexican blend cheese
1 teaspoon garlic, finely minced
1 1/2 tablespoons chili powder
1 teaspoon cumin
cayenne pepper to taste
salt to taste
2 chicken breasts, baked & shredded
1/2 bunch cilantro, chopped
4 green onions, chopped
10-oz. can Rotel tomatoes
1 package jalapeno cheddar tortillas

Directions:
Mix cheeses together until well blended.
Add all remaining ingredients and mix well. Cover and refrigerate for at least one hour.
Place one heaping spoonful onto tortilla.-Spread to edges using a metal spatula.
Roll and cut into slices.

  5. Hi! This may sound silly but is the flavor really like enchiladas? These look delish and I am considering it for our BBQ, but I don't like the flavor of enchiladas at all. Also, would this be OK to prepare the night before?

  6. I almost forgot, how many cups of chicken do you need for this recipe (or an estimate)? I already have some frozen chicken in the freezer so just need a ballpark.

  7. I made these for a baby shower on Sunday. I got SO many compliments! Thanks for the great recipe. I followed it almost exactly, except I used rotisserie chicken instead of canned chicken. Delicious :)
