Herbed Yogurt Chicken with Mango Couscous


I've been wanting to make this chicken for months. I found it on Sweet Tea in Texas and thought it looked and sounded so delicious. She paired this with mango rice, but I opted to do couscous since I am like addicted to it lately. I actually used a boxed couscous mix that had pine nuts in it and then added in the mango along with an herb mixture. I also halved the recipe since I just used four chicken breasts instead of a quartered chicken. The full recipe is in the link above and my adjustments are below. This meal was so flavorful and a great refreshing dinner for summer. The couscous was amazing and I couldn't get enough of it. Hope you enjoy!


Herbed Yogurt Chicken with Mango Couscous

Ingredients:
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh parsley
2 garlic cloves
1/2 tablespoon ground cumin
1/2 tablespoon sweet paprika
1/2 tablespoon coarse kosher salt
1/4 teaspoon cayenne pepper
1/4 cup olive oil
1/2 cup plain fat free yogurt
1/4 cup fresh lemon juice
4 boneless skinless chicken breasts
1 large ripe mango, peeled & cut into 1/2-inch cubes

For Cous Cous:
1 package couscous with pine nuts, cooked according to package directions
1/4 cup cilantro sprigs, chopped

Directions:
Purée first 7 ingredients in processor. With machine running, gradually add oil through feed tube and process until blended.
Transfer 1/4 cup herb mixture to small bowl; reserve. Add yogurt and lemon juice to remaining mixture in processor and blend.
Place chicken in 13×9x2-inch glass baking dish. Pour yogurt mixture over chicken; turn to coat. Cover and refrigerate 1 hour.
Prepare grill (medium heat). Place chicken on grill. Cover and grill until chicken is cooked through, turning every 5 minutes, about 15 minutes total. Meanwhile, cook couscous according to package directions. Once cooked, fluff with fork and add chopped mango, the reserved herb mixture, and cilantro and stir until mixed together. Arrange chicken on large platter and serve mango couscous alongside.
