Two weekends ago, Adam & I slept in and took it easy. After we woke up we layed in bed watching TV until around 11 am! While we were relaxing, I was perusing my google reader and saw this recipe and realized I had everything to make them. So we had pancakes at noon! These were so light & fluffy, everything a pancake should be. I love chocolate for breakfast, but if you don't this is a great basic pancake recipe for any topping or plain. You could not even tell that is was whole wheat. This is going to be our go-to pancake recipe for sure!
Whole Wheat Chocolate Chip Pancakes

Yield: 8 to 10 (6-inch) pancakes
Ingredients:
1 3/4 cups whole wheat flour
2 Tablespoons light brown sugar, packed
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 large egg
1 1/2 cups buttermilk
3 Tablespoons canola oil
chocolate chips
Directions:
In a medium bowl, whisk together flour baking powder, baking soda & salt, set aside.
In a large bowl, whisk together egg, buttermilk & oil. Once whisked together stir in the flour mixture just until moistened (batter will be lumpy).
Heat skillet or griddle over medium heat & spray with cooking spray. Using 1/4-1/3 cup measuring cup or ice cream scoop, scoop a spoonful of batter onto skillet or griddle , spread into a circle and top with chocolate chips. (I also think it would work well to fold the chocolate chips into the batter if everyone wants chocolate chips).
Cook over medium low heat for 1 to 2 minutes, until edges begin to bubble and you can see them becoming hard. Flip pancake over and cook for 1-2 minutes more until golden brown. Serve topped with powdered sugar & syrup.
