Whole Wheat Oatmeal Pancakes


As soon as I saw these whole wheat oatmeal pancakes on Cate's World Kitchen, I immediately planned for us to have breakfast for dinner this past weekend! These did not disappoint! They had great texture and were sweet yet nutty. They didn't give that overly wheaty taste, but had a great balance of flavors. They were thick and obsorbed the syrup perfectly! Definitely give these a try. We will be making them often I'm sure. The great thing is the recipe only makes about 6 pancakes so it's perfect for two, but super easy to double or triple if you have more mouths to feed.


Whole Wheat Oatmeal Pancakes

Yield: Approx. 6 pancakes

Ingredients:
1/2 cup non-fat vanilla or plain yogurt
1/4 cup milk (more if the batter seems thick)
1 egg
1 tbsp vegetable oil
1 tbsp honey
1 tbsp brown sugar
3/4 cup whole wheat flour
1/2 cup old fashioned oats
pinch salt
1/4 tsp baking soda
1 tsp baking powder
pinch cinnamon
pinch nutmeg

Directions:
Whisk together the yogurt, milk, oil, honey, and egg in a large bowl.
Stir the remaining ingredients together in a medium bowl, then add to the wet ingredients and mix gently. If the batter seems especially thick, add a few tablespoons of milk until you reach desired consistency.
Heat a non-stick skillet and spray with cooking spray.
Ladle out 1/3 to 1/2 cup of batter for each pancake and cook until golden brown on the bottom. Flip and cook an additional 2-4 minutes, or until golden on both sides. Repeat for each pancake.
Serve with desired toppings. (Butter, Syrup, Strawberries, etc.)
