Green Monster Smoothie


In honor of the start of baseball season, I decided to pay homage to my beloved Red Sox with my own green monster:) I am also trying to expand my breakfast and snack horizons. I've seen these in several places in the blogosphere. Two of my favorite blogs, Eat, Live, Run & The Fitnessista make them all the time so I went there for my inspiration. I was a little leary of these smoothies for a while but everyone kept saying how wonderful they were, so I decided to give it a go. Don't let the color scare you, this was SO delicious and definitely lived up to the hype! So refreshing and tasty...loving drinking my veggies!:) I can see how this might quickly become a frequent obsession, I mean snack, of mine. Also, the bloggies I mentioned above sometimes use frozen bananas instead of ice, so I'm excited to try that. The great thing about these smoothies is you can just put whatever you like in them.


Green Monster Smoothie

Ingredients:
2 cups spinach leaves
1 cup skim milk
1 1/2 to 2 tbsp. natural peanut butter or almond butter
1-2 tbsp. honey
1 tbsp. greek yogurt (optional)
1 tbsp. (handful) of parsley
1/4 cup cucumber, diced
approx. 2 handfuls of ice cubes

Directions:
Add all ingredients to blender & liquify until you get desired consistency. Give it a little taste to see if you need to add more of anything for your personal preference.
Makes enough for two medium smoothies or one giant smoothie.

  1. You have to try a frozen banana in one! The consistency is so creamy and thick. I love green monsters!

  2. My mom swears by smoothies with spinach in them! I also had no idea you were a Sox fan!!

  3. My mom makes something like this with avocado & coconut water... apparently they are great for weight loss & provide all of your essential vitamins!
